Happy New Year! Ok, so first of all congratulations on making it through 2020, we did it! No doubt last year was really difficult, whether you lost someone, or know someone who lost someone, or were just thrown off by every single thing changing, it's safe to say it was a weird year. That being said chances are you had to cancel or postpone at least one trip last year due to COVID-19, I myself had to cancel at least five trips. So new year, new travel list, let's get into this year's bucket list. I incorporated a lot of the most requested places that you sent me on Instagram, unfortunately Australia is on a lot of people's bucket list - rightfully so, I love it there, but travel will still be limited for quite some time, I wouldn't count on it for 2021. All of these locations have a mix of access to some time in a city but with great spots more out of the way, for those of you who are still anxious to be around too many humans. Happy planning and safe travels!

A safari in Africa has been on my bucket list probably since I was a little girl and first saw the Lion King. We have had to cancel this trip twice and currently have it booked for the beginning May. This option is great because you can fly into Johannesburg, see the apartheid museum and head into the bush. There will be limited human contact while you're on safari, and you'll be outside, so if you're still nervous about being around too many people maybe hanging out with a bunch of animals will work?

South Africa has several parks where you can see the Big Five, among the enormous variety of other animals, and it's ideal for your first safari. Botswana will give you a similar experience with the animals, but be prepared to pay a higher price as it is known for its exclusivity. If you're looking for breathtaking landscapes versus lots of animals consider Namibia. In case you have a few extra days on your trip, consider heading to Zimbabwe or Zambia and visiting the Victoria Falls. 

 

For anyone who wants a bit of a city vibe, you can fly into Cape Town after and do all the sites there - table mountain hike, wine country visits, etc. And to all my little daredevils who want to see another predator, keep in mind Cape Town is famous for it's cage diving with the Great White Sharks. 

1. African Safari

This little island in the middle of the Atlantic Ocean has been the talk of the town for a while. Its spectacular geography and remote location makes it the perfect summer destination for those who want to be in Europe but don't need to be queuing outside of a cathedral for hours with hundreds of people.

The easiest way to arrive here is from Lisbon. A few days in Lisbon and/or Porto will give you the city flavor before heading over to the island for hiking, surfing, and above all disconnecting with the craziness of the world - which we need to do now more than ever. If you have a few extra days and are a fan of wine (me...), you can head to the Duoro Valley for delicious wine tours.

2. Azores, Portugal

When I think of Morocco, I think of getting lost in the souks in Marrakesh, exploring the desert, and enjoying the gorgeous views of the Atlas Mountains. Morocco's versatile geography gives you the option to move around the country at your own pace, allowing yourself to be comfortable no matter what stage we are at with COVID.

The buzzing city can't be missed, you'll be transported into another time and place, waking up in your riad - perfect for your stay if you want to social distance. If you want to stay at one of the stunning hotels, rest assured that the new hotel policies are in place to make your stay safe and comfortable. If the souks and sites seem a bit overwhelming at this point in time, you're not alone, Marrakesh is also the door to the Sahara Desert, outdoor excursions are plenty and popular.

When venturing out to Fes or the Atlas Mountains, you'll enjoy the exotic culture and food, mixed with the spectacular views of the unique landscape of Northern Africa.

3. Morocco

I don't think I have ever met anyone that says they don't want to go to Iceland. Whether this amazing country is on the top of your bucket list or not, I bet it's on there somewhere. I think it's pretty obvious that this country in the middle of the North Atlantic is breathtaking and simply spectacular. In times of COVID, Iceland has been great at controlling the pandemic. They are currently allowing visitors in if you have antibodies (you will need proof, see the Iceland tourism website for more information). 

​

Take a dip in the Blue Lagoon, a stroll through the glaciers, or spend the night stargazing and hoping to see the Aurelia Borealis. Nearly all of the main "attractions" or things to do are outside here. The hotels have been very accommodating and provide lunch boxes "to go" so you can enjoy a picnic with a view. 

4. Iceland

Some of you may call my biased, and you are absolutely right, I am. Let me take you down to the northern most region of the longest country in the world. Fortunately, I am quite familiar with this desert since my grandmother lives here! The Atacama Desert is the closest thing you will get to on earth that resembles our nearest neighboring planet, Mars, in case you are just over being an earthling for a little. This territory will give you incredible valley's (Valle de la Luna and Valle de Marte) where you can see flamingos native to that region, as well as passing the lagoons along the way. Most of the world's most important observatories are located here, stargazing is inevitable, who knows what you might find in the sky apart from the normal satellites and shooting stars... I promise you will not regret this magical region.

5. Atacama Desert, Chile

Costa Rica, it truly deserves every piece of positive publicity it receives. This country has opened up its borders since November 2020, requiring a COVID insurance in case you should contract the virus; it will cover your hotel quarantine and any medical attention you may need. 

 

Unless you hate the tropics, you will find something for you to do here. You can make it relaxing and adventurous at Arenal, head to Manuel Antonio for exotic wildlife, head up to Santa Teresa to catch some waves and live the bohemian life, explore the Cloud Rainforest and coffee region, or make your way to Guanacaste for some adventuring on the water. If you're just looking to get spoilt, there are plenty of spas and thermal baths that will do the trick. You will not go wrong here, I promise. Pura vida!  

6. Costa Rica

Egypt is one of the most amazing places I've been lucky enough to visit. Aside from being home to wonders of the world, the ancient history truly carries you back thousands of years. While the sites and museums are fascinating, and probably what brings you to Egypt in the first place, there is a whole different impressive part of the country. Hopping from archaeological sites in Cairo, Aswan, or Luxor is always on the table, but be sure your list includes Sharm El Sheik and Gouna for some relaxing and world class diving.

Ok, I will say it, I am obsessed with Italy. I hope you're not tired of reading about it, because I am certainly not tired of writing about it. I go to Italy every single year, even if it's for three days, with the exception of 2020 of course. This country is complete in every single way. You have the option of diving into ancient history in Rome, explore the beautiful Tuscan countryside, the beautiful Amalfi Coast, the remote Puglia, spectacular Sicily, romantic Piemonte, the Emerald Coast in Sardinia, just to name a few, the options are limitless. You have the perfect mix of sites, city, shopping, outdoor activity, and of course lots and lots of delicious tastes. Buon Viaggio! 

8. Italy

If you need to escape anywhere, might as well be a perfect little piece of land in the Caribbean, right? Especially for those of us need our little European fix without actually stepping on Europe's continent. As of today this island is only requiring a negative antigen test before entering. You'll be able to enjoy astonishing views, alluring French food, people, and language - obviously, while at the same time enjoying the ease of the Caribbean. Be sure to choose the time of year you head over wisely, it is often in the path of hurricanes (hurricane season is from June 1 - November 31).

This island is known for the lifestyles of the rich and famous, but you'll find lots of adventure on the winding roads, kite boarding and surfing in the waves, or hiking the lush hills. 

9. Saint Barthelemy

The great outdoors, what we all used to take for granted and probably do less so now. After going through lockdowns, quarantines, isolations, whatever else we are calling it these days, I appreciate being outside more than ever. There are boundless things to do here, everything from horseback riding, rafting, mountain biking, 4x4 Jeep tours, hikes, and that's just for the adventurer. There are plenty of high end glamping options for those who enjoy a more rustic holiday but prefer to spend it getting pampered.
